Warm Lemon Pudding
This warm silky pud is rich on taste, yet limited on the waist line, great warm or cold, just the thing to finish off a meal.
Ingredients: Serves 2
- 50ml semi-skimmed milk
- 20g sugar
- 1 teaspoon lemon extract
- ½ tablespoon corn flour
- ½ teaspoon vanilla extract
- 1 medium egg, beaten
- Tiny pinch of ground sea salt
Combine half the milk, half the sugar (10g) in a medium saucepan and bring it to a gentle simmer over a medium heat, stirring occasionally.
Meanwhile, whisk the remaining sugar, lemon extract and cornflour in a medium bowl, add the remaining milk and mix until blended. Next whisk the hot milk mixture into the lemon mixture then pour the combined mix back into the pan and bring to a simmer over medium heat, whisking constantly, it will go thick and glossy in about 3 minutes, then remove from heat.
Whist a little of the hot lemon mixture into the beaten egg to increase the temperature of the egg so it does not curdle, then mix that back in with the rest of the pan and cook over medium-low heat, whisking constantly, until steaming and thickened, about 2 minutes, do not let it boil, finally whisk in the vanilla extract and serve warm.
