Warm Chocolate Pudding
This soft and warm pudding is perfect for a chocolate treat, delicious warm or cooled, sprinkle with a little icing sugar for a great look.
Ingredients: Serves 2
- 50ml semi-skimmed milk
- 20g sugar
- 1 tablespoon cocoa powder
- ½ tablespoon cornflour
- ½ teaspoon vanilla extract
- 1 medium egg, beaten
- Tiny pinch of ground sea salt
Combine half the milk, half the sugar (10g) in a medium saucepan and bring it to a gentle simmer over a medium heat, stirring occasionally.
Meanwhile, whisk the remaining sugar, cocoa and cornflour in a medium bowl, add the remaining milk and mix until blended. Next whisk the hot milk mixture into the cocoa mixture then pour the combined mix back into the pan and bring to a simmer over medium heat, whisking constantly, it will go thick and glossy in about 3 minutes, then remove from heat.
Whisk a little of the hot cocoa mixture into the beaten egg to increase the temperature of the egg so it does not curdle, then mix that back in with the rest of the pan and cook over medium-low heat, whisking constantly, until steaming and thickened, about 2 minutes, do not let it boil, finally whisk in the vanilla extract and serve warm.
