Stuffed Cheesy Peppers
It may be a blast from the past, but stuffed peppers are always a reliable, satisfying and tasty weight loss friendly dinner. You can change the flavours easily by swapping the herbs or cheese used or adding a little garlic powder.
Ingredients: Serves two
- 2 medium peppers, any colour
- 200g cooked brown rice
- 1 tablespoon chopped fresh basil, about a small handful from the bunch
- 6–8 pitted olives, rinsed and chopped
- Pinch of ground sea salt
- Pinch of freshly ground black pepper
- 75g Edam cheese, grated, or any hard cheese
- 1 tablespoon olive oil
Preheat the oven to 180°C/350°F/Gas Mark 4.
Cut the top off the peppers and scoop out the core and seeds, next mix the rice, basil, olives, seasoning, two thirds of the cheese and the oil together then pack the rice mixture into the peppers, replace the tops of the peppers and cook in a hot oven for 10–15 minutes.
When the peppers are cooked, test that the peppers are tender at the top of the pepper, any further down and it may split then remove and discard the pepper tops.
Finally sprinkle the remaining cheese over the top and put back in the oven for 2 minutes until the cheese has melted. Serve straightaway with a selection of vegetables or a mixed salad.
