Spiced Apple Meringues
These simple little light puddings are a tempting final course which will finish of and main meal.
Ingredients: Makes two individual meringues
- 1 medium cooking apple, can use sharp eating apples, about 200 g
- ½ teaspoon cinnamon
- 15g caster sugar
- 1 tablespoon icing sugar
- 1 egg white
Preheat the oven to 180°C/350°F/Gas Mark 4.
Peel and chop the apples then stew with the caster sugar and cinnamon with a little water until soft, then spoon into two individual oven proof bowls and allow to cool for a few minutes.
Whisk the egg white and gently fold in the icing sugar and place over the apple until it is completely covered.
Bake in the preheated oven for 10 minutes until the meringue is puffy and golden and serve immediately.
