Speedy Apple and Raisin Open Plan Tart

Taste without weight, the hint of spice really brings the depth of favours to this wholesome open plan tart.

Ingredients: Serves four

  • 2 sheets of filo pastry
  • 1 medium cooking apple, can use 2 sharp eating apples, about 200g
  • 1 tablespoon raisins
  • 2 tablespoons caster sugar
  • ½ tablespoon vegetable oil

Prep

Preheat the oven to 180°C/350°F/Gas Mark 4.

Peel, thinly slice, rinse and dry the apple(s).  Unroll the filo pastry cutting it into to two, so you have four more or less equal sheets of filo pastry.  Place one sheet of pastry on a baking tray, lined with lightly oiled parchment paper. Lightly brush a little oil on the pastry and place the next sheet on top, repeat until you have all four pastry sheets ready.  Place the thinly sliced apple evenly over the pastry, leave a small boarder all around.

Finally sprinkle the apple with the raisins and caster sugar, use may like to use a little more sugar for taste.

Bake for 20 minutes until the pastry is golden and crisp.
