Italian Vegetables on a Grilled Panini

Fill the Panini and either place it in a very lightly oiled hot frying pan or griddle pan pushed down firmly for a few moments either side, a flat saucepan lid is good for this, or place the filled Panini under a hot grill for a few moments either side.

Ingredients: Makes 1 lunch

  • ¼ red onion, cup thinly sliced
  • 30g artichoke hearts, rinsed well drained, coarsely chopped
  • 1 small tomato, sliced
  • ½ teaspoon balsamic vinegar
  • ½ teaspoon olive oil
  • ½ tablespoon chopped fresh oregano
