Finnish Whipped Berry Pudding

This Finnish whipped berry pudding recipe has a great light and airy texture, this is made with fresh blueberries, most small berry fruit will make a fabulous pudding.

Ingredients:  Serves 2

  • 240ml water
  • 100g fresh blueberries, save a few for serving
  • 75g fine semolina
  • 30g sugar
  • ½ tablespoon lemon juice
  • Pinch of ground sea salt

Place the water and blueberries in a medium saucepan and bring to a boil over medium-high heat and simmer, uncovered, for 15 minutes, then strain the blueberries really well to keep the blueberry juice.  Return the juice to the saucepan and stir in the semolina and lemon juice.

Next cook the semolina mixture over medium-low heat, stirring, until the mixture has thickened slightly, 2 to 4 minutes and remove from the heat and let cool for 15 minutes.

Transfer the cooled to a food mixer and whisk on a low speed for 1 minute then increase the speed to high and beat until the mixture doubles in volume, so the texture is similar to marshmallow, it will take 5-8 minutes, finally chill in the fridge for at least 30 minutes.

Serve garnished with blueberries.
