Coconut Prawns with Ginger & Mango Sauce
In this great weight loss friendly meal the nice mix of simple prawns with the sweet taste of the ginger and mango is fantastic. The prawns are very popular with children so make extra for their cold nibbles as well.
Ingredients: Serves two
- 1 small ripe mango, peeled and pitted
- 1 tablespoon rice vinegar, you can use white wine vinegar
- 2x ½ tablespoon honey
- 1 teaspoon grated fresh ginger
- 200g king prawns raw
- ½ honey
- 1 teaspoon soy sauce
- ½ tablespoon vegetable or olive oil
- 75g desiccated or flaked coconut
Preheat oven to 200°C/400°F/Gas Mark 6.
For the dipping sauce combine the mango, vinegar, honey and ginger in a food processor and pulse until smooth.
In a separate bowl mix the second amount of honey and soy sauce. Place the washed and patted dried (in a paper towel) prawns one at a time in the honey / soy mix and roll them in the coconut, pressing the coconut firmly so it sticks. Bake in a pre heated oven for 7-8 minutes until the prawns are golden brown.
Serve with the mango dipping sauce and a choice of vegetables or mixed salad.
