Chocolate and Ginger Peaches
Ingredients: Serves 2
- 4 ginger nut biscuits, crushed
- 1 tablespoon brown sugar
- 2 large ripe peaches, halved and pitted
- 4 x ½teaspoons butter
- 15 g dark chocolate shavings
Combine the crushed biscuits and brown sugar. Hollow out one third of the centre of each peach half with a teaspoon or melon ball maker. Fill each peach half with a rounded tablespoon of biscuit and sugar mixture, pushing it in quite firmly.
Arrange peaches in an ovenproof dish, then place ½ teaspoon of butter on top of each peach half.
Place under a medium grill for 2 minutes or until the butter melts, serve straight away with a sprinkling of shaved dark chocolate and a little crème fraiche if desired.
