These mouth watering slim friendly drumsticks are fantastic hot with a selection of veggies or cold with a simple side salad.
Ingredients: Serves two
- 4 small free-range chicken drumsticks, skin removed
- 1 medium egg, beaten
- 75g panko breadcrumbs
- 30g almonds, finely chopped
- 1 tablespoon chopped fresh rosemary, about 8 sprigs
- 1 tablespoon vegetable or olive oil
- 1 tablespoon plain flour
Preheat oven to 180°C/350°F/Gas Mark 4
Combine the breadcrumbs, almonds and rosemary, season the flour with salt and pepper, beat the egg dip the drumsticks in the flour first, then the beaten egg and finally dip the chicken in the panko breadcrumbs to coat Place the drumstick in foil on a lightly oiled baking tray.
Cover the baking tray with extra layer of foil and cook the chicken for 30 minutes. Remove the top foil and cook the drumsticks for a further 10 minutes or until coating is golden brown, make sure the chicken is cooked by checking that the juices run clear when pierced with a fork. Serve hot with a selection of vegetables or the drumsticks can be eaten cold within a couple of days, do not re-heat them.
