Tequila and Mango Tango Individual Trifles
This is a lovely little twist on a traditional trifle, this delicate pud is brilliant for cheering up long winter nights.
Ingredients: Makes two individual trifles
- 4 sponge fingers
- 1 pots of pre prepared jelly, vegetarian friendly
- 1 tablespoon Tequila, optional
- 1 tablespoon fruit juice
- 50g custard
- 30ml double cream, whipped
- 50g fresh, frozen or tinned (rinsed) mango slices, you can use any fruit in season or available like pineapple or peaches.
Break the sponge fingers and sprinkle with the tequila, if you’re not using tequila soak in a little more fruit juice. Place around the side of a ramekin or glass dish.
Break up the jelly with a spoon and place on top of the sponge fingers, add a tablespoon of custard over and then finish with a teaspoon of whipped cream and fresh fruit. Place in the fridge to for 20 minutes before serving.
