Super Speedy Vegetable & Mozzarella Bake
A great flavourful midweek bake, great for freezing too if you make a larger quantity.
Ingredients: Serves two
- 2 courgettes, thinly, sliced
- Small red pepper, sliced
- 1 tablespoon vegetable or olive oil
- 1 medium onion, diced
- 1 cloves garlic, minced
- 200ml spaghetti sauce, recipe here
- 50g mozzarella cheese, grated
- Pinch of ground sea salt
- Pinch of freshly ground black pepper
Pre-heat the oven to 170°C/325°F/Gas Mark 4.
In a lightly oiled frying pan or griddle cook the veggies for about 3-4 minutes until cooked.
Next sauté the onion and garlic until the onion is tender, about 4 minutes.
Mix the veg, seasoning, onion and garlic in a medium oven proof dish, be careful not to break the veggies too much.
Next pour the spaghetti sauce over the mixture and gently stir altogether then sprinkle the mozzarella cheese on top.
Bake in the preheated oven for about 20 minutes, or until heated through and cheese is bubbly on top.
