Rocket Pizza with Poached Egg
A slightly different take on the traditional pizza, the added egg is a great source of weight loss friendly protein. You can either use the homemade spinach base, recipe available here, or you can use a small shop bought one, either way a really delicious diet meal.
Ingredients: Serves one
- 100g pizza base
- 30g ricotta cheese or cream cheese
- 30 grated hard cheese, any type you like
- 1 large free range egg
- 100g rocket
- Pinch of ground sea salt
- Pinch of freshly ground black pepper
- ½ tablespoon table vinegar
Preheat oven to pizza base instructions.
In a saucepan, very gently heat the ricotta or cream cheese with the hard cheese to combine, then spread the cheese mixture over the pizza base, leaving a slight uncovered border around the edge. Bake for 5 minutes.
As the pizza bakes, boil some water in a pan, reduce to gentle simmering point add the table vinegar stir in and gently break 1 egg into the water (breaking the egg into a cup and gently placing in the boiling water often saves burnt fingers and broken yolks), cook for 2-3 minutes depending on desired yolk, when cooked carefully remove from the water with a well slotted draining spoon then top the cooked pizza with rocket and the poached egg, and season to taste, wonderful with a generous mixed salad.
