Peach & Blueberry Cobbler
This is a healthier version of a traditional cobbler, this is with peach and blueberry, other fruits can be easily used, fresh, frozen or tinned, experiment to see what suit you.
Ingredients: Serves 2
- 20g butter, melted
- 1 (410g) tins sliced peaches in fruit juice
- 75g blueberries, fresh or frozen
- 60g self-raising flour
- 60g caster sugar
- Pinch of ground sea salt
- 125ml milk
Preheat the oven to 190°C/375°F/Gas Mark 5.
Stir together the blueberries, peaches and juice from the tin with the melted butter. Pour into a medium sized lightly greased oven proof dish.
Mix the flour, sugar and salt then stir in the milk and pour the mixture over peaches and blueberries.
Bake on bottom rack of preheated oven 15 minutes or until lightly browned, then move to top rack for 15 minutes more.
Delicious warm or cooled.
