Meringue-Topped Strawberries & Raspberries
Strawberries and raspberries is a classic combo, add a little ginger for a little extra spice – delicious hot or cold.
Ingredients: Serves 2
- 75g raspberries
- 20g sugar
- ½ teaspoon grated fresh ginger, optional
- 75g strawberries fresh or frozen, not thawed, halved
- 1 tablespoon icing sugar
- 1 egg white
Preheat the oven to 180°C/350°F/Gas Mark 4.
Carefully mix the raspberries, strawberries and ginger is using, together -divide into two ramekins on a baking sheet.
Whisk the egg white and gently fold in the icing sugar and place over the fruit until it is completely covered.
Bake in the preheated oven for 10 minutes until the meringue is puffy and golden and serve immediately.
