Meringue-Topped Cinnamon Peach & Pear 

The warming cinnamon complements the sweet meringue so well to give you a pudding that you will know you have had.

Ingredients:  Serves 2

  • 1 whole fresh pear peeled and cut into 3cm small pieces
  • 1 whole fresh peach cut into 3cm small pieces
  • 20g sugar
  • 1 tablespoon icing sugar
  • ½ teaspoon cinnamon
  • 1 egg white


Preheat the oven to 180°C/350°F/Gas Mark 4.

Stir the chopped pear and cinnamon in a medium bowl then divide between 2 oven proof ramekins. Place the ramekins on a baking sheet and cover tightly with some foil and bake until the pear has softened, about 10-15 minutes, do not stir as you want to keep the pear in its original pieces.

Carefully tuck the cut peaches between the pear chunks, do not stir or the pear will break apart.

Whisk the egg white and gently fold in the icing sugar and place over the pear  until it is completely covered.

Bake in the preheated oven for 10 minutes until the meringue is puffy and golden and serve immediately.
