Meringue-Topped Apple & Raspberry
Most fruits go well under a meringue topping, you can use either fresh, frozen or even well drained tinned fruits, experiment yourself, see what combinations you like.
Ingredients: Serves 2
- 1 medium cooking apple, can use sharp eating apples, about 200g
- 20g sugar
- 75g raspberries fresh or frozen, not thawed
- 1 tablespoon icing sugar
- 1 egg white
Prep
Preheat the oven to 180°C/350°F/Gas Mark 4.
Peel and chop the apples then stew with a little water until soft, then spoon into two individual oven proof ramekins and allow to cool for a few minutes
Carefully tuck the raspberries into the apples, try to keep them whole.
Whisk the egg white and gently fold in the icing sugar and place over the apples and raspberries until it is completely covered.
Bake in the preheated oven for 10 minutes until the meringue is puffy and golden and serve immediately.
