Incredible Carrot & Coriander Soup

A lovely retro favourite which, with some nice homemade baked croutons for a bit of extra crunch, makes a real lunchtime treat.

Ingredients:  Serves 2

  • ½ tablespoon vegetable oil
  • ½ small onion, roughly chopped
  • 1 small garlic clove, chopped
  • Pinch of ground sea salt
  • Pinch of freshly ground black pepper
  • 1 litres vegetable stock
  • 3 large carrots, peeled and roughly sliced
  • 2 tablespoon chopped fresh coriander, about a small handful from the bunch
  • Grating of nutmeg (optional)


In a large heavy saucepan, heat the oil on a medium heat then sweat the onion until clear and just browning. Next, add the garlic for a few moments – do not let it burn – and seasoning. Add most of the stock, carrots and coriander and bring it all to a gentle boil then reduce the heat and simmer until the carrots are tender, about 10 minutes.

Remove the pan from the heat and allow the soup to cool for a few minutes, next blend in a food processor or with a hand blender until really smooth, you may need to do this in a couple of batches to get a really smooth soup, just add a little extra stock if you want the soup a little smoother.  Serve the soup with the croutons and a little nutmeg sprinkled on top.
