Ginger, Mango and Peach Open Plan Tart
Good old Peach and Mango is such a great combination for this diet helpful open plan tart. The great thing about these tarts is you can experiment with lots of different ingredient combinations, weight loss can be interesting and enjoyable.
Ingredients: Serves four
- 2 sheets of filo pastry
- ½ can mangos slices in fruit juice
- ½ can peach slices in fruit juice
- 1 tablespoon flaked almonds
- 1 tablespoon caster sugar
- ½ tablespoon vegetable oil
Preheat the oven to 180°C/350°F/Gas Mark 4.
Thoroughly drain the mango and peach slices. Unroll the filo pastry cutting it into to two, so you have four more or less equal sheets of filo pastry. Place one sheet of pastry on a baking tray, lined with lightly oiled parchment paper. Lightly brush a little oil on the pastry and place the next sheet on top, repeat until you have all four pastry sheets ready. Spread the mango and peach evenly over the pastry, leave a small boarder all around.
Finally sprinkle the mango and peach with the flaked almonds and caster sugar.
Bake for 20 minutes until the pastry is golden and crisp.
