Egg Salad Wholemeal Roll with Watercress

Really lovely as a wholemeal roll or in an open sandwich.

Ingredients: Makes 1 lunch

  • 1 large hard-boiled egg
  • 1 tablespoon crème fraiche
  • ½ tablespoon low-fat mayonnaise
  • ½ teaspoon Dijon mustard (Optional)
  • 1 spring onion finely chopped
  • Pinch of ground sea salt
  • Pinch of freshly ground black pepper
  • Handful watercress
