Delightful Rhubarb Meringues
Rhubarb is such a versatile weight loss helpful food, no fat, yet tasty enough to please any palate, save some fruit for the Sunshine Rhubarb Crumble pud too.
Ingredients: Makes two individual meringues
- 100g rhubarb
- 15 g caster sugar
- 1 tablespoon icing sugar
- 1 egg white
Preheat the oven to 180°C/350°F/Gas Mark 4.
Clean and chop the rhubarb then stew with the caster sugar with a little water until soft. Next spoon into two individual oven proof bowls and allow to cool for a few minutes.
Whisk the egg white and gently fold in the icing sugar and place over the rhubarb until it is completely covered
Bake in the preheated oven for 10 minutes or until the meringue is puffy and golden, when ready serve immediately.
