Crab Salad Bagel

A really nice lunch to enjoy, spread the filling over either side of the cut bagel, do not try to sandwich it all together, it is a bit too messy.

Ingredients: Makes 1 lunch

  • 10 slices cucumber, dried on a kitchen towel
  • 30g crabmeat, fresh or canned, well drained
  • ½ celery stick, chopped
  • ½ small red bell pepper, sliced
  • 1 spring onion, finely chopped
  • ½ teaspoon lemon juice
  • ½ tablespoon low-fat mayonnaise
  • Pinch of freshly ground black pepper
  • ½ tablespoon chopped fresh parsley
