Breakfast Tofu Scramble
Tofu is for a terrific vegan friendly enjoyable breakfast, although scrambled tofu is a great alternative to scrambled eggs, it is a tasty food in its own right and it is brilliant with lots of different flavours.
Ingredients: Serves two
- 200g tofu, drained and broken into bite-size pieces
- ¼ teaspoon ground turmeric (optional)
- 1 tablespoon vegetable or olive oil
- Pinch of ground sea salt
- Pinch of freshly ground black pepper
- Red Pepper, chopped
Heat a lightly oiled large frying pan for a minute, add the tofu and with wooden spoon breaking up tofu as it cooks until it is evenly golden and moist, about 1-2 minute until tofu is heated through until looks like well-set scrambled eggs,
Season with salt and pepper and chosen accompanying ingredients.
Serve straight away.
