Versatile Veg Soup
This is a great recipe for using up what you have the fridge of veg rack, great for freezing too.
Ingredients: Serves two
200g any vegetables, such as broccoli, carrots, mushrooms, onions, corn
1 medium potato
1 tablespoon vegetable or olive oil
500ml vegetable stock
1 tablespoon chopped fresh oregano, about a small handful from the bunch
1 tablespoon crème fraiche to serve
Cube the vegetables and potato. In a lightly oiled saucepan fry the chopped vegetables for 5 minutes, until they begin to soften.
Cover with the stock and simmer for 10-15 minutes until the vegetables are tender.
Remove the pan from the heat and allow the soup to cool for a few minutes, next blend in a food processor or with a hand blender until really smooth, you may need to do this in a couple of batches to get a really smooth soup, just add a little extra stock if you want the soup a little smoother.
Serve the soup with a small dollop of crème fraiche.
