Retro Sardines in Lemon Dressing on a Walnut Salad
Sardines are not only a terrifically retro, but are wonderfully diet friendly too, this super simple meal is brilliant at any time of year, especially good for picnics or for a quick last minute late night supper – a tin of sardines is always a good cupboard staple.
Ingredients: Serves 2
- 1 tin of sardines in spring water.
- 1 tablespoon vegetable or olive oil
- 1 tablespoon lemon juice
- Pinch of ground sea salt
- Pinch of freshly ground black pepper
- Lemon wedges (optional)
Cut the sardines into thin slivers and place in a mixing bowl.
Mix together the oil, lemon juice and seasoning spoon over the sardines and leave to chill for 20 minutes.
Serve the sardine slices with a large green and walnut salad and spoon the rest of the lemon dressing over the dish – quick, tasty & delicious.
