Open plan, yet deep on flavour, this effortless weight loss friendly tart can be prepped just before you want to eat so you can really enjoy the just baked flavours of the fruit and nuts.
Ingredients: Serves four
- 2 sheets of filo pastry
- 1 can pineapple pieces in fruit juice
- 1 tablespoon pecans, chopped
- 1 tablespoon caster sugar
- ½ tablespoon vegetable oil
Preheat the oven to 180°C/350°F/Gas Mark 4.
Thoroughly drain the pineapple. Unroll the filo pastry cutting it into to two, so you have four more or less equal sheets of filo pastry. Place one sheet of pastry on a baking tray, lined with lightly oiled parchment paper. Lightly brush a little oil on the pastry and place the next sheet on top, repeat until you have all four pastry sheets ready. Spread the pineapple evenly over the pastry, leave a small boarder all around.
Finally sprinkle the pineapple with the pecan and caster sugar.
Bake for 20 minutes until the pastry is golden and crisp.
