Light Choca Mocha Cake
This simple lovely light and speedy chocolate cake is a delight for anyone to enjoy, just make sure you make enough for everyone.
Ingredients: Serves six
- 100g self-raising flour
- 100g butter, room temperate
- 100g casting sugar
- 1 tablespoon cocoa
- 2 medium eggs
- 25g soft cheese, for the filling
- 25g crème fraiche, for the filling
- 1 tablespoon very strong black coffee
- 25g dark chocolate grated, keep a little for decorating
Preheat the oven to 180°C/350°F/Gas Mark 4.
Whisk the eggs, butter, flour and sugar until light and fluffy next divide the mixture between two lightly greased and lined 16cm (6 inch) sponge tins and bake for 15-20 minutes until the cake have risen and are firm to touch, once cooked leave to cool on a cake rack in the tins, remove them when they are completely cool.
In an oven proof bowl over a saucepan of boiling water melt the chocolate and coffee together, allow to cool completely. Mix the cream cheese and crème fraiche together then fold in the cooled chocolate / coffee mixture and spread the mixture on one cooled cake side and sandwich to the other cake. Finally decorate the cake with a little icing sugar and grated chocolate on top.
