Ginger Chicken with Asparagus & Mushrooms
This weight loss friendly recipe adds a bit of a kick to the everyday, which is sometimes needed when you are on a diet, it is a great appetising quick meal, ready in moments.
Ingredients: Serves two
- 1 tablespoon vegetable or olive oil
- 1 teaspoon fresh ginger, grated
- 2 x 100g free-range boneless skinless chicken breasts, cut into strips
- 200g asparagus
- ½ small onion, sliced
- 8 close cup mushrooms wiped and sliced
- Pinch of ground sea salt
- Pinch of freshly ground black pepper
In a lightly oiled frying pan or wok add the ginger, then the chicken, stir constantly for 5 minutes. Remove chicken from the wok or pan keeping it warm in a low heat oven or with some kitchen foil, placed just over the top.
Add remaining oil to the pan, when heated, add the salt and pepper, asparagus, onions and mushrooms and stir-fry for 2-3 minutes. Return the cooked chicken to the pan, cook a further 2-3 minutes or until the chicken is completely cooked. Fabulous with a mixed salad or a choice of vegetables, really nice with a spoonful of onion mash.
