DESCRIPTION

This is a tremendous stir fry with a little twist of ginger, you can use just about any veg as long as they do not break up when cooking, experiment see what you like. Add a few strips of cooked chicken if desired.

Ingredients: Serves two

  • 1 tablespoon cornstarch
  • 1 clove garlic, crushed
  • 1 teaspoon chopped fresh ginger
  • 1 tablespoon vegetable or olive oil
  • 1 small head broccoli, cut into florets
  • 100g mange tout
  • 100g carrots, matchsticks
  • 100g asparagus, sliced to 4cm long
  • 1 tablespoon soy sauce
  • ½ medium onion, chopped
  • Pinch of ground sea salt
  • Pinch of freshly ground black pepper

Prep

In a large bowl mix the cornstarch, garlic, half the ginger and half the oil until cornstarch is dissolved then coat the broccoli, mange tout, carrots and asparagus, tossing to lightly coat.

Heat the remaining oil in a large fry pan or wok over medium heat and cook the vegetables  for 2 minutes, stirring constantly to prevent burning.

Stir in soy sauce and a little water then add the onion and seasoning and remaining ginger, cook further until all the vegetables are tender but still crisp.

Serve straight away with a spoonful of lemon and garlic rice.
