Blue Cheese Omelette with Rustic Chunky Chips
I really like omelettes they are such a weight loss helpful meal, getting that lovely soufflé bit under the grill at the very end is essential, it makes the whole meal really great to look at as well some rustic chunky chips go with this omelette brilliantly.
Ingredients: Serves two
- 4 medium free-range eggs
- 1 tablespoon semi skimmed milk
- Pinch of ground sea salt
- Pinch of freshly ground black pepper
- 50g blue cheese, grated or any cheese
Whisk the eggs with the milk salt and pepper getting as much air into the mixture as possible, cook the beaten eggs in a lightly oiled frying pan.
Finally add the cheese just as the omelette is setting, then place under a very hot grill for 2–3 minutes until the omelette has risen slightly, serve immediately with a few rustic chips, recipe here, and a tossed salad.
