You can do a few extra mushrooms from another dish and put them aside for this great sweet jacket potato – a quick zap in the microwave with have them up to temperature in seconds.
Ingredients: Makes 1 lunch
- 1 medium jacket potato
- 5 mushrooms, of your choice, whipped, sliced and lightly fried
- 1 tablespoon crème fraiche
- ½ teaspoon of paprika, on top
