Pineapple is a great traditions accompaniment for pork for a good reason, it is sharp, but sweet flavour compliments the pork very well in this slimming useful meal, terrific with onion mash and a selection of veggies.
Ingredients: Serves two
- 2 x un-smoked gammon steaks, 1 cm thick
- 1 tablespoon lime juice
- 2 tinned pineapple whole slices, drained and blotted dry
- 1 small red onion, cut into thick slices
- ½ tablespoon vegetable or olive oil
- Pinch of ground sea salt
- Pinch of freshly ground black pepper
In a lightly oiled frying pan or griddle cook the gammon for 3-4 minutes, half way through cooking them, blot off any excess fat that may have appeared with some kitchen towel, when cooked remove the gammon from the pan onto a plate keep them warm in a low heat oven or with some kitchen foil, placed just over the top.
Next add the pineapple and onion to the pan or griddle and cook the pineapple each side, about 4 minutes until browned and the onion is tender. Serve with the pineapple over the gammon with an assortment of vegetables or mixed salad.
