Under 300 Calories

These lovely quick and speedy individual meatloaves go well with so many side dishes, great for freezing too.

Ingredients: Serves two

  •  75g frozen spinach
  • 225g lean mince beef
  • 50g oat bran
  • 50g fine breadcrumbs (any type of bread)
  • 1 onion finely chopped
  • ½ tablespoon tomato puree paste
  • Pinch of ground sea salt
  • Pinch of freshly ground black pepper
  • 1 crushed garlic clove
  • 1 tablespoon water
  • 1 tablespoon barbecue sauce


Preheat oven to 180 °C.

Defrost the spinach and squeeze out excess liquid.

In a bowl combine the beef, oat bran, onions, tomato puree, salt, pepper and garlic. Make 4 burgers portions form the mixture and make a hollow in the centre of each one then fill a tablespoon of the spinach seal the top with the beef mixture so the spinach is completely enclosed.

Mix the water and barbecue sauce, if you’re using it and spread it over the top of the burgers.

Cook uncovered in preheated oven for 20 to 30 minutes or until the meatloaf is firm, serve with a selection of vegetables.
