A deceptively simple, yet really tasty lunch, make the parsley butter in a large batch and use for other meals too.
Ingredients: Makes 1 lunch
- 1 medium cheese scone, warmed
- 50g unsalted butter, at room temperature
- 2 tablespoon finely chopped fresh parsley, about 2 handfuls from the bunch
- Pinch of ground sea salt
Place the butter in a small bowl, add the finely chopped parsley, salt and mix with a fork, when it is all mixed in re-chill it until needed.
