This is no ordinary cheese roll, wonderful made in a soft wholemeal roll or on some sliced soda bread.

Ingredients: Makes 1 lunch

  • 2 slices Emmental cheese
  • 1 large tomatoes, sliced
  • 1 tablespoon low-fat mayonnaise
  • A few fresh basil leaves
  • Pinch of garlic salt
  • Pinch of freshly ground black pepper
  • Handful of lettuce, shredded
