Eggs are brilliant for breakfast, packed with nutrients, vitamins and minerals and as they are high in protein they will keep you fuller longer.
This classic and simple scrambled egg recipe, which you can add different flavours to, herbs like Rosemary are delicious great. A few sautéed mushrooms or peppers are just as great.
Ingredients: Serves two
- 2 large eggs
- 30ml milk
- ½ tablespoon oil
- Pinch of ground sea salt
- Pinch of freshly ground black pepper
Beat the eggs. milk, salt and pepper until blended together.
Heat the oil in a medium saucepan, then pour the egg mixture and keep stirring, making sure you lift it all off the bottom of the pan, do not overcook.
Serve with a slice of wholemeal toast.
