Under 300 Calories
This is lovely Mediterranean take on an old favourite superb with some traditional Greek-style vegetables like and courgettes.
Ingredients: Serves two
- 1 garlic clove, crushed
- ½ teaspoon thyme
- 1 lemon, zest and juice
- 4 small lamb chops, trimmed of fat
- ½ tablespoon vegetable or olive oil
- 50g Greek yoghurt
- Pinch of ground sea salt
- Pinch of freshly ground black pepper
Mix the garlic, thyme and lemon juice together and rub into the chops or cutlets, allow the flavours to soak in for 5 minutes. Cook the chops in a lightly oiled frying pan or griddle pan on a medium heat for 2–4 minutes per side on each side or until desired degree of doneness
Mix the Greek yoghurt and lemon zest with the salt and pepper, then cover the cooked chops on one side with the yoghurt mix and place under a hot grill for a 2 minutes or until the yogurt mixture is bubbling.
