The sunflower seeds give this appetising diet friendly dessert and extra hint of real luxury without any extra unnecessary calories, lovely with a little dribble of single cream.

Ingredients: Makes two crumbles

  • 100g rhubarb
  • 25g plain flour
  • 1 tablespoon sunflower seeds
  • 1 tablespoon porridge oats
  • 1 tablespoon bran
  • 2 tablespoons caster sugar
  • 15g cold butter
  • 1 tablespoon dark brown soft sugar


Preheat the oven to 180°C/350°F/Gas Mark 4.

Peel and chop the rhubarb then stew with 1 tablespoon of caster sugar and a little water until soft, allow to cool and add the sunflower seeds.  Place the rhubarb in a medium or two individual oven proof dishes.

In a bowl rub the butter into the flour with the back of a fork until it resembles breadcrumbs.  Add the bran, remaining caster sugar and about half the oats, then spread over the rhubarb. Sprinkle the remaining oats and brown sugar on top.

Bake in a preheated oven for 20- 30 minutes, delicious hot or cold.
