Under 200 Calories
A light quick favourite and having a spicy accompaniment which you can moderate to your own taste is a great way of enhancing this dinner.
Ingredients: Serves two
- ½ tablespoon vegetable or olive oil
- 2 salmon fillet steaks
- 250g spinach, washed
- 2 lemon wedges
- 2 tablespoons low-fat crème fraîche
- ½ teaspoon paprika (optional)
Heat the oil in a frying pan or griddle and fry the salmon on each side for 6–8 minutes. At the same time, steam the spinach until it starts to wilt. Make sure it is well drained and add to the salmon for 2 minutes.
Serve with lemon wedges and gently heated crème fraîche, sprinkle with some paprika if required. Fantastic with either a dressed side salad or just right with potato and swede mash.
