A slightly different and quick take on a tasty compote, not the biggest of puds, yet just enough to keep the sweet seeking taste buds satisfied after a main course.
Ingredients: Serves 2
- 2 tablespoon Greek yoghurt
- 3 tablespoon fromage fraîs
- 2 rings of canned pineapple, drained and chopped
- 2 ginger nut biscuits, crushed
- Pinch of ground cinnamon
- Sprig of fresh mint
Mix the yoghurt and fromage fraîs together then stir in the chopped pineapple.
Take two individual serving bowls or small glass tumblers and sprinkle most of the crushed biscuits in the bottom.
Spoon the yoghurt mixture over the ginger nut biscuits, sprinkle the remainder of the biscuits on the top with a pinch of cinnamon and a sprig of mint.
