Under 150 Calories

A lovely classic soup, fantastic for a warming lunch or part of evening meal,   brilliant for batch making for freezing too, so ready any time.


Ingredients:  Serves 2


1 litres vegetable stock

1small onion, chopped

2 stick celery, chopped

1 tablespoon chopped fresh basil, about a small handful from the bunch

1 tablespoon tomato puree

400g plum tomatoes, cut into wedges

Pinch of ground sea salt

Pinch of freshly ground black pepper

2 tablespoons plain low-fat yogurt




Combine  the vegetable stock, chopped onion, celery chopped basil, tomato puree, salt, pepper and plum tomato in a large saucepan and bring to a boil then reduce the heat and simmer for 30 minutes.


Remove the pan from the heat and allow the soup to cool for a few minutes, next blend in a food processor or with a hand blender until really smooth, you may need to do this in a couple of batches to get a really smooth soup, just add a little extra stock if you want the soup a little smoother.  Serve the soup with the croutons and a little nutmeg sprinkled on top
