On its own or with a variety of accompanying flavours omelettes are a great, quick and easy breakfast – or main meal.
Ingredients: Serves two
- 1 tbsp vegetable oil
- 1 tbsp cold water
- Pinch of ground sea salt
- Pinch of freshly ground black pepper
- 2 medium eggs, beaten
Beat the egg with the water, salt and pepper until foamy.
Pre heat a grill , heat a lightly oiled small frying pan for a minute, until hot, add the egg and swirl around the pan evenly. When almost cooked, just a little raw add the ingredients of choice and mix in a little until covered with a little egg.
Use a palette knife to lift the omelette carefully to look at the underside to check it is golden-brown.
Finally place under a hot grill until golden brown.
Serve straight away.
