Fantastic take in a pitta, the avocado and pineapple complement each other wonderfully.

Ingredients: Makes 1 lunch

  • ½ tablespoon low-fat mayonnaise
  • 1 tablespoon plain yogurt
  • ¼ small red pepper, finally chopped
  • 30g pineapple chunks or rings, drained and roughly chopped
  • Pinch of ground sea salt
  • Pinch of freshly ground black pepper
  • ¼ teaspoon lemon juice or balsamic vinegar
  • ½ small avocado
  • 1 wholemeal pitta
