A wonderful mix of pork and mango, this weight loss friendly meal is so tasty and attractive it is a great one for entertaining as well as a regular meal.
Ingredients: Serves two
- ½ tablespoon vegetable or olive oil
- 200g lean pork loin, cubed
- Pinch of ground sea salt
- Pinch of freshly ground black pepper
- ½ tablespoon cumin
- ½ green pepper, sliced
- ¼ medium onion, sliced
- 1 clove garlic, crushed
- 1 small mango, peeled and cut into pieces, mango canned in fruit juice is fine to use
Season the pork cubes with salt and pepper and cumin. In a lightly oiled frying pan or wok cook the pork -4-5 minutes, remove the pieces from the pan onto a plate keeping them warm in a low heat oven or with some kitchen foil, placed just over the top
Add the remaining the oil to the pan and sauté the pepper, onion, garlic and mango for about 5 minutes, stirring frequently, return the pork to the wok and stir it all together for 1-2 minutes. Serve straight away with some lime rice and a tossed salad.
