Pies may not be the first thing that jumps to mind when you on a weight loss plan, but you do not have to miss out with this tasty, diet helpful pie.

Ingredients: Serves two

  • 250g spinach, fresh or defrosted frozen
  • ½ tablespoon vegetable or olive oil
  • 1 finely chopped garlic clove
  • 75g Feta cheese, crumbled
  • 1 tablespoon toasted pine nuts
  • 2 medium free range eggs
  • 2 sheets of filo pastry


Pre heat the oven to 170°C/325°F/Gas Mark 3

Wash and steam the spinach, allow it to cool and drain as much excess liquid from it as possible, if you’re using defrosted make sure they are really well drained with any excess water squeezed out.

In a lightly oiled frying pan or griddle sauté the garlic for 1 minute, mix together well with the spinach and add the salt, pepper, feta, pine nuts and egg then spoon the spinach mix into individual oven proof dishes.

One at a time lightly oil the filo pastry sheets then scrunch them up and place on top of the spinach mixture, try to make sure the mixture is all covered, next bake for 20-25 minutes until the filo is crispy and golden brown. Eat straight away with a tossed salad or selection of vegetables.
