It’s a little bit cheaty, but that really does not matter when you can have this great tasting soup ready in seconds.
Ingredients: Serves two
½ tin (200g) chopped tomatoes
50g thin spaghetti, broken into short lengths
200g frozen mixed vegetables, carrots, peppers, broccoli
1ltr hot vegetable stock
Pinch of ground sea salt
Pinch of freshly ground black pepper
1 tablespoon vegetarian parmesan-style cheese, to serve
1 tablespoon vegetarian pesto, to serve
In a large saucepan mix vegetable stock and tomatoes then bring to a gentle boil. Add the spaghetti pieces and simmer for about 5 minutes.
Next add the frozen vegetables and bring back to the boil and simmer for 4 minutes or until the spaghetti is cooked.
Serve in bowls with a light coating of the pesto and sprinkled with a little parmesan.
