This a wonderfully warm moist ginger cake is just the thing to finish a meal or great with a cup of coffee too – when it is feeling a bit lonely.

Ingredients: Makes 6-8 slices

  • 150g self-raising flour
  • Pinch of ground sea salt
  • 2 tablespoons Greek yogurt
  • 20g caster sugar
  • 1 large egg, beaten
  • 1 teaspoon finely grated fresh ginger
  • ½ teaspoon vanilla extract
  • 1 tablespoon coconut oil, melted, or vegetable oil


Preheat the oven to 180°C/350°F/Gas Mark 4.

Lightly grease a small loaf tin.

Mix the flour, baking powder and salt in a medium bowl.  In a second bowl, combine the yogurt, sugar, egg, grated ginger and vanilla extract.  Next slowly whisk in the flour mixture then fold in the coconut oil and pour into the loaf tin, bake in a preheated oven for about 30- 40 minutes or until cooked.

When completely cooled cut into slices to serve.
