A tasty meal for any day great for a meal with friends, the zingy homemade salsa is a great accompaniment too.
Ingredients: Serves two
- 2 x 100g 1-cm thick steaks, any type trimmed of any excess fat
- 1 teaspoon chilli powder
- Pinch of ground sea salt
- Pinch of freshly ground black pepper
- ½ tablespoon vegetable or olive oil
- 2 tomatoes, diced
- 2 teaspoons lime juice
- 1 tablespoon chopped fresh coriander, about a small handful from the bunch
Prep
Sprinkle both sides of the steak with chilli powder and a pinch of salt and pepper, cook in a lightly oiled frying pan or griddle on a medium heat for 2–4 minutes per side for medium-rare.
Remove the steak from the pan or griddle keeping them warm in a low heat oven or with some kitchen foil, placed just over the top, leaving the remaining meat juice in the pan. For the salsa, mix the tomatoes, lime juice, coriander and one pinch of salt in the pan the steak was cooked in.
Keep stirring until the tomatoes soften – about 3 minutes. Serve the steaks topped with the salsa and an undressed side salad.
