A lovely classical combination of traditional fruits, with tremendous crunchy meringues to add a little bit of different to the fruits.
Ingredients: Serves two
- 1 medium apple, cooking or firm eating
- 1 medium pear
- 1 tbsp lemon juice
- 1 tbsp brown sugar
- 1 egg white
- 15 g (1 oz) caster sugar
- 1 tbsp cocoa powder
Preheat the oven to 150°C/325°F/Gas 3.
Peel and chop the apple and pear and simmer on a low medium heat with the lemon juice and brown sugar. While the apple and pear mixture is cooking, whisk the egg white until it forms stiff peaks then gently fold in the caster sugar and cocoa powder.
Spoon the fruit mixture into individual ovenproof bowls and then spread the meringue on top and bake for 10–12 minutes or until firm to touch.
